Classic cuisine with modern accents
In Peter Hagen-Wiest's kitchen, craftsmanship and the character of the original ingredients take centre stage. The classic French foundation is reinterpreted with modern European influences.
The foundation is laid by an exquisite selection of ingredients, all of which promise uncompromising quality. Most of the vegetables used are regional and sourced from the restaurant's own biodynamic cultivation. The menus follow the principle of 'less is more' – each dish highlights the pure, unadulterated flavour of its ingredients. Guests can choose from two exclusive eight-course tasting menus, which are complemented by exquisite wines selected by sommelier Sascha Schmidt.
